Lemon Pepper Shrimp Scampi


 Happy New Year


Depending on where you are from, you may be serving pork and sauerkraut today or black eyed peas and collard greens for good luck. (Maybe next year I will blog about the experience of making my very first batch of collard greens for New Year's Day.) This year I'm deviating from the traditional January 1st menu and blogging something completely different for New Years Day.  I decided to go with a healthy meal - to get my year started off on the right foot. Who knows, maybe this will be our new New Year's Day tradition.

This recipe came from the November 2012 issue of Cooking Light magazine.  

Lemon Pepper Shrimp Scampi
1 cup whole wheat orzo pasta
2 Tablespoons fresh parsley
1/2 teaspoon salt
7 teaspoons butter
1 1/2 pounds shrimp
2 teaspoons minced garlic
2 Tablespoons fresh lemon juice
1/4 teaspoon pepper




Cook orzo according to package directions.













Drain.  Toss immediately with parsley and 1/4 teaspoon salt.



Melt 1 Tablespoon butter in skillet.  Sprinkle shrimp with 1/4 teaspoon salt.

 
Add shrimp to skillet and saute until cooked through.


Transfer shrimp to bowl with orzo.
 
 







Melt remaining butter with lemon juice, pepper and garlic and skillet.







Add to pasta and shrimp and toss to combine.



Serving: 1/2 cup orzo and 7 shrimp
