Sparkling Limeade and Cherry Limeade

To make fresh limeade, you first need to make a simple syrup.

Combine 1 cup of sugar with 1 cup of water in a saucepan.  Add several strips of lime peel for flavor.

Bring syrup to a boil and continue to boil for 1 minute.

Add 4 springs of mint leaves.  Allow mixture to cool for 30 minutes.

Strain syrup into a pitcher.
Juice 8 - 10 limes to make 1 1/2 cups of fresh lime juice.

Add fresh lime juice to the strained syrup.  Chill.  Pour 2 Tablespoons syrup into a glass and fill the rest of the glass with sparkling lime water.

This limeade was REALLY good but my son thought is would be even better if we turned it into cherry limeade.

I added some maraschino cherries and a little cherry juice to each glass and voila - cherry limeades!

Delicious

Stay cool.
Ciao!
