Dinner for a champion




Months of strength training, cardio conditioning, gym workouts and disciplined eating habits have finally paid off - Ryan placed 6th at the State wrestling tournament last weekend!  We could not have been more proud of him.   He definitely worked hard to achieve his success.  Now that wrestling season is officially over - it's time to celebrate.  At our house, we celebrate with food.  Our celebratory dinner of champions last night included lasagna ruffles, strawberry spinach salad, oat pan rolls and tiramisu for dessert. 

Oat Pan Rolls
2 cups oats                                  2 ½ cups boiling water
2/3 cup brown sugar                   4 ½ teaspoons yeast
¼ cups butter, cubed                   ½ cups warm water
1 Tablespoons salt                      2 cups bread flour
2 cups whole wheat flour

Combine oats, brown sugar, butter and salt.  Stir in boiling water.


Cool to 110.


Dissolve yeast in warm water and let stand 5 minutes.  Add to oat mixture along with 2 cups bread flour.


Beat in wheat flour.  Knead 6-8 minutes.


Place in greased bowl.  Cover and let rise 1 hour.



Divide dough into 20 pieces.  Place in a greased 9x13 or two 8 inch square baking pans.


Cover and let rise 45 minutes.  Bake 30 minutes at 350.



Brush with melted butter while still warm.


The rolls were a little too tightly packed into the pan so I think next time, I will make them in something slightly larger.  Squeezed rolls didn't stop us from enjoying them though.  They were really good.

After dinner we had another family celebration - a head shaving.  Ben and Ryan had made a deal that if Ryan placed in the top 6 at the State wrestling tournament, he would shave his head.  Well, last night was time to make good on that promise.  Check out these awesome before and after photos.
